This spinach and strawberry salad is a perfect way to add colour to your plate and it’s packed with Therapeutic Foods from the Institute for Functional Medicine’s Detox Food Plan.
Therapeutic Detox foods in this recipe:
- Almonds
- Olive Oil
- Spinach
- Strawberries
- Green Onion
Yield: 4 servings
Ingredients:
- 1 cup fresh strawberries, quartered or halved depending on size
- 4-6 cups fresh spinach, washed, dried, torn into pieces
- 1/4 cup chopped toasted pecans or sliced almonds
- 1/2 cup chopped Feta (optional)
- 1 green onion (white and green), chopped
- 1 Tablespoon balsamic vinegar
- 2 Tablespoons olive oil
- Salt & Pepper to taste
Directions:
- Place cut berries over spinach in a serving bowl.
- Add chopped green onion and drizzle with olive oil and balsamic vinegar.
- Season with salt & pepper to taste.
- Mix to incorporate dressing through the spinach and berries.
- Garnish with nuts and crumbled Feta.
