Enjoy the versatility of these Mediterranean-inspired meatballs, perfect for both satisfying meals and healthy snacks. Make-ahead and freeze them for a quick and convenient mid-week meal.

 

Yield: 25-30 meatballs

 

Meatball Ingredients:

  • 500 g lean ground beef
  • ½ medium red onion, finely diced
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • 15 ml (1 tbsp.) fresh oregano or 5ml (1 tsp. dried)
  • 5 ml (1 tsp.) ground coriander
  • 2 ml (½ tsp.) ground cumin
  • 1 egg
  • 75 g (½ cup) feta cheese (optional)
  • Sea salt & pepper to taste

 

Avocado Tzatziki Ingredients:

  • 1 ripe avocado
  • large cucumber, seeds scraped out
  • 2 cloves garlic, minced
  • 15 ml (1 Tbsp.) red onion, diced
  • Juice of 1 lemon
  • 15 ml (1 Tbsp.) fresh dill
  • 70 g (¼ cup) Greek yogurt
  • Sea salt & pepper to taste

 

Directions:

  1.  Preheat your oven to 180°C (350°F).
  2. In a large bowl, combine all the meatball ingredients.
  3. Form the mixture into 5cm (2 inch) balls.
  4. Place the meatballs on a raised-edge baking sheet and bake for 25 minutes, turning them halfway through the cooking process.

 

Avocado Tzatziki Sauce:

Blend all the avocado tzatziki sauce ingredients in a food processor or blender until the texture becomes smooth and creamy.
